Here is a very quick
(takes about 10 minutes)
and tasty recipe for a zucchini side dish.
Serves 4
Ingredients
6 zucchinis
(dark skinned, about 3 cm in diameter).
2 cloves of garlic crushed
(more if you like).
4 tablespoons of chopped parsley
(again more if you like).
2 tablespoons of oil and 2 tablespoons
of butter (butter adds colour but you
can use all oil if you prefer).
Pepper & salt.
Method
1. Wash and halve zucchinis, then chop at 2cm intervals. Sometimes I peel the skin at alternative intervals for presentation.
2. Sauté garlic in oil and butter, add parsley now and cook for a further
2-3 minutes, or otherwise add fresh parsley at the end.
3. Add zucchinis, sauté until soft,
and season. Serve.
