Northern Italian Potato Salad
Quantity of potatoes (waxy/firm type are best,
esp pink eyes or Dutch creams)
Whole juicy garlic cloves
Cracked pepper and sea salt to garnish
Virgin olive oil
White wine vinegar
Steam potatoes and drain. Cool slightly then slice or cube. Add garlic and chopped parsley while warm. Then add oil, vinegar, pepper and salt to taste. Remove garlic cloves to serve or notify consumers! Tastes great the next day and can be used in sandwiches. Simple but delicious!
